Low Carb Mom's

Welcome! I'm a busy recruiter in Financial Services (LOVE it!) and a mom to four awesome kids:
(Aerial 17, Maddison 13, Elijah 11 & Noah 8).

Low Carb is how I dropped the baby weight & got in shape. I blog about livin' la vida low-carb in hopes of helping other mom's implement the lifestyle and lose the weight for good using "normal" people food and meal planning.

Dessert was amazing!

Ok, so it has been just three days since we returned to the Low-Carb lifestyle. I was SO craving sweets yesterday, but not nearly as bad today... until now. I did eat less than 1/2 cup of Sugar Free Jello tonight, and it tasted amazing! Funny how a few days without any form of sweets can make Jello taste SUPER sweet.

Jello on Induction is perfectly acceptable, but in moderation. 1/2 cup serving is plenty. Adding some home made whipped cream sweetened with Splenda or Truvia is delish also, but you have to count the carbs in the Splenda or Truvia. 1g Carb for Splenda. From what I can tell 0g net carbs in 1 packet of Truvia. I'll update if I find that to be inaccurate.

We have a birthday party coming up soon, and I know if we don't prepare ahead of time Scott & I will have a major temptation with the cake & ice cream. My solution? A YUMMY Low-Carb Cheesecake.
